Cheese Corn Tarts
Cheese Corn Tarts, with their rich filling and delightful taste, are the perfect way to kick off your festivities in style.
Ingredients
For the Tart Shells:Quantity | Ingredients |
1 cup | All-purpose flour |
1/2 cup | Butter, cold and diced |
1/4 tsp | Salt |
2-3 tbsp | Ice water |

1 cup | Sweet corn, fresh or frozen |
1 cup | Britannia The Laughing Cow Cheese Block, grated |
1/2 cup | Britannia The Laughing Cow Cream Cheese |
½ tsp | Black pepper |
½ tsp | Red chilli flakes (optional) |
¼ cup | Spring onions, chopped |
Method
- In a mixing bowl, combine the all-purpose flour and salt. Add the cold diced butter and rub it into the flour until the mixture resembles breadcrumbs.
- Gradually add ice water, one tablespoon at a time, until the dough comes together. Do not overwork the dough. Wrap it in cling film and refrigerate for at least 30 minutes.
- In a mixing bowl, combine the sweet corn, grated Britannia The Laughing Cow Cheese Block, Britannia The Laughing Cow Cream Cheese, black pepper, red chilli flakes (if using), chopped spring onions, and salt. Mix well until all ingredients are combined.
- Preheat your oven to 180°C.
- On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness. Use a round cookie cutter or a glass to cut out circles and place them into a greased muffin tray, pressing them gently to form tart shells.
- Spoon the cheese and corn filling into each tart shell, filling them generously.
- Bake in the preheated oven for 20-25 minutes or until the tart shells are golden brown and the cheese is melted and bubbly.
- Allow the tarts to cool slightly before removing them from the muffin tray. Serve warm, garnished with extra spring onions if desired.
