300 gms | Pasta |
100 gms | Asparagus |
3 | Garlic cloves, minced |
1 cup | Heavy cream |
1/2 cup | Parmesan cheese, grated |
1/2 cup | Mozzarella cheese, shredded |
1/2 cup | Pasta water (reserved from boiling pasta) |
1/2 tsp | Red pepper flakes |
1 tsp | Lemon zest |
2 tbsp | Olive oil |
To taste | Salt and pepper |
Method
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions. Reserve ½ cup of the pasta water, then drain the rest and set the pasta aside.
- Heat olive oil or butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the asparagus pieces and cook for 3–5 minutes, stirring occasionally, until they are tender but still crisp.
- Lower the heat to medium-low and pour in the heavy cream. Stir gently. Add the Parmesan and mozzarella cheese gradually, stirring continuously until the cheese melts and forms a creamy sauce.
- If the sauce becomes too thick, add the reserved pasta water a little at a time to achieve the desired consistency.
- Add the cooked pasta to the skillet and toss well to coat in the sauce. Season with salt, black pepper, and red pepper flakes. Stir in the lemon zest for a fresh, tangy finish.
- Divide the pasta among serving bowls. Garnish with extra Parmesan cheese and a drizzle of olive oil. Serve immediately!
