1 cup | Cream cheese |
1/2 cup | Mango puree |
1/2 cup | Biscuits |
1/2 cup | Butter, melted |
1/2 cup | Corn flour |
1/2 cup | Condensed milk |
Method
● Take biscuits and process them in a blender until they are crushed. Add melted butter to the crushed biscuits and blend again.
● Transfer the biscuit crumbs into the pan and press it down, until it is flat. Put the pan in the fridge, so it would have a sturdy base.
● Take a bowl and add the cream cheese, condensed milk, mango puree and corn flour. Mix this batter well until the texture is smooth.
● Add the cheesecake batter to a pan and create a water bath of warm water in a bigger dish. Place the cheesecake pan in the water bath and put the dish to bake in a preheated oven at 160 °C for 40-45 minutes.
● After the cheesecake is baked, cut along the edges, and separate it from the pan. Add the mango puree on top of the cake and transfer the cheesecake to a plate and put it in the fridge for 7-8 hours.
● Once it’s set, take it out and garnish the cheesecake with fresh fruits and serve chilled.
