Preparation
Step 1
Prepare the chocolate mixture
For the brownie layer, start by preheating the oven and greasing the square pan with butter. Place a parchment paper and in a heatproof bowl over a pan of simmering water, combine the dark chocolate and butter. Heat the combination and stir frequently until the chocolate and butter are melted properly. Microwave for 30 seconds and stir well until the mixture is smooth and combined. Stir the cocoa powder over the top of the chocolate and butter mixture. Stir until well combined and in another bowl, combine the eggs, brown sugar and granulated sugar. Mix everything on high heat with a hand mixer for about 2-3 minutes until the mixture has lightened and increased in volume.
Step 2
Pour the batter into pan
Add the chocolate mixture and mix well to combine. Add vanilla essence and salt, and mix well until incorporated. Transfer the brownie batter to the prepared pan and ensure that there are no air bubbles. Allow it to sit for a minute and tap on the counter for a few times. Now, for the cheesecake layer, add all the cheesecake layer ingredients in a mixing bowl. Combine with a hand mixer until the mixture is smooth and lump-free. Add a dollop of cheesecake layer on top of the brownie batter and swirl in using a toothpick for a great texture. Add the rest of the cheesecake mixture and bake the brownies for 25 minutes.
Step 3
Slice the brownies into squares, enjoy!
Once the brownie is cooked properly and remove the brownies from the oven and place the pan on a wire rack. Slice into squares using a knife and store the leftover brownie in an airtight container, enjoy!
